Marinara Sauce Ingredients:
- Fresh summer tomatoes from the vine or the New Bedford Farmers Market! About 4-6, diced.
- 2 cloves of fresh garlic, chopped
- 1 small onion, chopped
- Salt and pepper to taste. Red pepper flakes (optional)
- Fresh whole leaf basil
- Pasta of choice

Directions:
- Sauté the garlic and onion in a little bit of olive oil in a pan on medium heat.
- Cook until translucent, about 5 minutes. Do not overcook or let it turn brown.
- Add tomatoes, salt, and pepper.
- Bring to heat until bubbling. Turn down heat between low and medium and simmer for 20 minutes.
- Stir. Add a little water, about 1/4 cup if needed.
- Add fresh chopped basil, saving whole leaves for garnish.
- Toss with your favorite shape pasta. Pasta with lines works best so it can hold the sauce in place.
- Season to taste. Add a sprinkle of parmesan cheese and MANGIA! (Eat, in Sicilian.) Xx~
